Why do Christians dwell on the death of Jesus by practicing m?

Surely given all the wonderful things that Christians believe Jesus did, the m is a bit of a morbid affair? Does anyone know who designed the ceremony and why re-enacting the last supper was deemed a good way to praise god? for that matter, why is the cross the generally accepted symbol of Catholicism? Surely the Ichthus is a bit more jolly?
